Matt Moran’s Aria Sydney introduces their first dinner dedicated solely to organic and biodynamic practices on 5 October. The four-course dinner exploring wild and ethically farmed produce matched with organic wines, will be hosted by wine writer and presenter, Mike Bennie.
Two of Australia’s great avant-garde winemakers, Bryan Martin from Ravensworth and James Erskine of Jauma Wines, will showcase a selection of their distinct, vibrant and textural wines throughout the dinner. Mike will take guests through the practices of Bryan and James’ James natural winemaking.
Head chef, Jason Staudt, has curated a menu to pair with wines chosen by the guest winemakers.
The menu includes; raw Albacore, clams, broad beans; glazed Maremma duck, artichoke, red mustard; dry-aged Arcadia beef, smoked bone marrow, charred purple sprouting broccoli; and La Luna Holy goat cheese, green tomato, rye bread. Produce on the menu is from farms including Arcadian Certified Organic Beef, Sutton Grange Organic Farm Cheeses and Luke Winders Southern Highlands Aylesbury Duck Farm. These family farms proudly uphold the principles of organic farming.
The wines on offer include a broad selection from both wineries showcasing the diversity of these incredibly talented vinters. From petillant natural bubbles, to textural whites and robust reds with a few little surprises along the way.
