Last Thursday, 23 March, Etta made its official debut at 60 Lygon Street, Brunswick East.
The 80-seat neighbourhood-style bistro, designed by IF Architecture, is the first venture by hospitality veterans and co-owners Hayden McMillan, Dominique Fourie McMillan and Hannah Green.
Etta's produce-driven menu is designed to share with a strong focus on local producers. Guests can expect seasonal plates such as mozzarella pasta with peas and broccoli; hen's egg, mushroom, and smoked celeriac; King George whiting, lentils and lemon pil pil, and charcoal lamb rump, goat's cheese and cumin ash. To complement Hayden's menu, restaurant manager Hannah has curated a trimmed list of food-friendly drops from local and international small-batch producers.
Hannah and Dominique have assembled a stellar team, with experience across some of Melbourne’s most celebrated restaurants.
Hannah says, "I'm thrilled to have a team of this calibre on board for the opening of Etta, many of whom I’ve had the privilege of working alongside already at restaurants. I look forward to embarking on this new venture with them and sharing our passion for good food and great hospitality with our new neighbours.”
