Michael and Zara Madrusan, owners and operators behind Made In The Shade group (The Everleigh, Connie’s Pizza, Heartbreaker, Navy Strength Ice Co, and The Everleigh Bottling Co) have completed a refreshing renovation to their award winning venue, The Everleigh. Showcasing a more substantial food menu, updating interior design elements, The Everleigh continues to evolve as a flexible and versatile space for their customers.
The new food menu will comprise of a selection of European influenced dishes designed to share, ranging from light fare to more substantial plates. For snacks, choose the ‘boozy pickles’ - vegetables creatively infused with spirits and spices. A little play on classic cucumber sandwiches, Salt Cucumbers are seasoned mini cucumbers served with creamy horseradish butter and toast, or try the White Anchovies in vinegar and olive oil with caper and balsamic dressing.
For something more substantial, the cheese melt oozes with smoked Gruyere, whisky-soaked shallots and mustard butter. A nod to the French style pithivier, the braised beef cheek pie is subtly sweet with tomatoes, black garlic and parsnips. The heartiest dish of the menu, the eggplant gnocchi, features slow-roasted eggplant in lemon zest and garlic, served with ricotta gnocchi, goats curd and parsley. Other menu items include pork and veal meatballs, and the Duck and Prune Terrine, made by Robbie Bell from City larder, cured meats and market cheeses.
“We’re moving into a new phase for The Ev and continuously looking to up the ante. After recently being awarded national Cocktail Bar of the Year at Australian Bartender’s annual Bar Awards, we are reminded of how the bar has matured in her seven years on Gertrude Street. We’ve broadened the scope of what The Everleigh is as she grows, offering more for our guests across food, wine and design”, says Michael.
Whilst the bar remains recognisable and elegant with its much-loved old world charm, for Michael and Zara the subtle renovations are simply part of the venue’s evolution whilst they continue to offer a truly hospitable, intimate atmosphere where both regulars and visitors can feel at home. Soft tones feature throughout interiors and rich textiles warm the seating area. A couple of the bar’s famous leather booths have been removed in place of hexagonal mirrored tables and velvet arm chairs to create more open space that caters to both couples and larger groups.
The new private room, The Starling Room can be booked exclusively for intimate drinks with friends, and with more seats at the bar than ever, plus standing room for those passing through, The Everleigh 2.0 need not only be reserved for that special occasion, but enjoyed for elevated drinking experiences seven nights a week.
Zara says,“We’re all about the customers experience and have observed what people want from the space over the years. We knew our guests were after a bit more vibe and interaction so we opened up the seating and changed the flavour of the space a little to better cater to that energy.”

The drinks are undeniably the core of The Everleigh’s offering, promising attention to detail and quality through consistent methods and techniques. The drinks menu features classic cocktails that are tried and tested alongside house drinks showcasing the team’s own creative talents. However it’s their signature Bartender’s Choice offering that intrigues, allowing the bartender to get to know their customer and deliver a bespoke cocktail based on their likes and dislikes. Don’t fancy a cocktail? The new menu boasts an impressive wine list that includes a wide selection to try by the glass.
Since launching in 2011, The Everleigh has grown from strength to strength with recognition across Australia, recently taking out national Cocktail Bar of the Year at Australian Bartender Magazine’s annual Bar Awards 2018, and internationally where they received a nomination at the Spirited Awards for Best International Cocktail Bar.
